Kaikoura means a meal of crayfish: kai is food, koura is crayfish, and the name tells you exactly what this coast has offered travellers for centuries. The town sits on a peninsula beneath mountains that fall straight to the sea, about two and a half hours north of Christchurch on one of New Zealand's most dramatic coastal roads.

What makes Kaikoura world famous lies just offshore. A deep ocean canyon runs close to the coast, and its nutrient-rich waters draw giant sperm whales year round, along with acrobatic dusky dolphins, fur seals and wandering albatross.
